Teri-Fic Sunday

I got a recipe from the internet to cook Teriyaki
chicken.
It turned out surprisingly good - esp the sauce.
I'll definitely cook this dish again.

Ingredients:
3/4 pounds chicken breasts or thighs
2 tbsp sake (rice wine)
4 tbsp soy sauce
4 tbsp mirin (sweet rice wine)
2 tbsp sugar
*grated ginger
Preparation:Poke chicken using a fork. Mix other ingredients in a bowl. Marinate the chicken in the mixture for 15 minutes in the refrigerator. Heat some vegetable oil in a frying pan. First, fry the skin side of the chicken on medium heat until the skin is browned. Turn the chicken over to fry the other side on low heat. Pour the sauce used to marinate chicken in the pan. Cover the pan and steam cook the chicken on low heat until done. Remove the lid and simmer until the sauce becomes thick. Stop the heat. Slice the chicken and serve on a plate. Pour thickened sauce over the teriyaki chicken. Garnish with grated ginger if you would like.

Activities @ 33 degree Celsius

The weather is getting terribly warm & humid.As you can see the temperature this afternoon is hovering ard 33 degree Celsius - and that is inside the house!I decided to braise the leftover frozen pork belly from last week again.And I also boil some lotus root and spare ribs soup.After that,I used the soup to cook rice porridge for Immanuel.All I need to do was crack an egg into it a la Japanese style. Oishii. To round off the meal nicely, we had a very sweet rock melon which I bought from the wet market this morning - Ainsley & LexXi had apples too.Sweet Saturday.....

Lexxi's eye operation



Lexxi was diagnosed with a rather serious right eye ulcer at Dr. James Tan Veterinary Centre. Eye ulcer is resulted from the dryness and inflammation of the eyes, or from some other irritation or trauma, medication is again tried initially. Especially if the ulcer is a superficial one, antibiotics usually heal it.
If the ulcer is a deep one or has punctured through the cornea into the eye itself, another innovative type of surgery is performed. The ulcer is covered with a truly organic “bandage” - the dog’s own third eyelid, or a flap from the white part of his eye. The bandage is left on for
several weeks while antibiotics are used to heal the ulcer. It can then be removed with a snip or two of the stitches holding the bandage in place.

We will go back in a month's time to remove the stitch. In the meantime, Lexxi will have to wear his e-collar.

おかえりなさい, Lexxi!

This is Lexxi - a male Pembroke Welsh Corgi. We just have to adopt him because he is so much like Clicquot! We are his 3rd family and we have decided that this is the last time he'll have to be transferred around. He's got an eye infection problem but we should be able to take care of it. He is so sweet and lovely. We adore him - including Immanuel. He can even call out "Lexxi" so clearly! Welcome Home , Darling Lexxi!!! This is gonna be your home forever more..... Muacks much!

A young buddy


Currently reading ....

Dabo and I are currently reading this book by Dr. James Dobson. We hope it will open up insights for us to nurture Immanuel and how to biuld a healthy Christian family environment.The things that Dr. Dobson mentioned abt boys almost totally describe our little darling! Now, we've finally understood y our boy does certain things that he shouldn't be doing!A great book for any parent w bringing up boys!

あかし

Tonight we had dinner w my dad,my bro and his
wife. My bro announced that he is going to quit his job and set up his own venture. I fully support his decision. We had the otoro and it was simply amazing. The Kobe beef sukiyaki was great too. Yummy!!!
